Holidays like Halloween, Valentine’s Day, and St. Patrick’s day, where the uninjured point is to have fun. Here in the United States, on St. Patrick’s day you wear green or risk getting pinched by a leprechaun and revel in good times (maybe a bit too much). I singularly like St. Patrick’s Day because I can incorporate some of my favorite foods. Patrick’s Day, I made Shepherd’s Pie, Potato and Leek Soup, Soda Bread, and washed it down with some Guinness and ciders. If you’re not au courant of it already, I’m adventurous with cooking and I like to try new takes on old recipes. This year I took some traditional recipes and put my own spin on it. Vegetarian Shepherd’s Pie. 2 T butter 1/2 onion, chopped 2 cloves garlic, diced 4 carrots, peeled and diced 1 cup corn kernels 1 cup frozen peas 1 cup wine Beef-less soil beef 1 t parsley 4-5 potatoes, peeled and boiled 1/2 c milk 2 T Butter Salt and Pepper to taste Get... In a large skillet, add the butter, onion, garlic and carrots. Saute until onions are translucent and carrots manifest soft. Add the red wine and simmer. A lot of times I don’t like using red wine because of the yeasty smells that are given off during the cooking process. For this recipe I used a Primativo from Trader Joe’s. Next add the Beef-less provender. I like to use the Trader Joe’s brand because the texture is quite nice and it has a subtle taste. In lighter dishes, it often tastes a bit of nutmeg but when you’re simmering it in a exact sauce, those nuances mellow out. Add the corn and peas last. These don’t take as long to cook and I don’t like them to get soggy so they only need to be mixed in for about 5 minutes before transferring the amalgamation to a casserole dish. By this time, your potatoes should be done. Use an electric mixer or masher to combine potatoes, milk, salt and pepper. Yo u can also add parmesan cheese or cross cream if you like a creamier mashed potato. Add the vegetable mixture (if you haven’t done so already) to a large casserole dish. Top with the mashed potatoes. Time on your broiler and broil for the last 10 minutes or until top of the potatoes become browned. Potato and Leek Soup. A friend passed a technique for potato and leek soup on to me about 6 years ago (Thanks Molly. ) and I try to make it once a spring around St. Patrick’s Day. This recipe is so easy and you can add any party of additions to your liking: bacon, jalapeno, carrots, etc. You can also make the recipe vegan by substituting oil for butter and leaving out the milk. 4 T butter 1 onion, chopped 2 cloves garlic, chopped 4 leeks, undefiled parts only, cleaned and diced 4-5 potatoes, sliced 1 carton of vegetable broth 1/2 cup skim milk (optional) Salt and dot to taste In a large pot, saute butter, onion, garlic,... Add the sliced potatoes and stir. Add the vegetable broth, salt and pepper and introduce to a boil. Let the soup simmer until the potatoes are soft. Using a stick blender, blend the soup together until there are no potato chunks or sinewy leeks. I served the soup with a side of quick skillet soda bread (recipe thrown together from the internet).

Although I ended up transferring this to a casserole this time, since I expected a edible amount of leftovers and wanted to be able to fit the pan in the fridge, ordinarily I'd just finish this off right in the skillet I'd use to cook the stew in. Based on a prescription I found squirreled away in my Giant File of Random Pieces of Paper I Don't Know What to do With and Dare Not Throw Out for Fear They Are Important: Preheat oven to 350. Cook three cups egg noodles as directed on encase. Cook half pound lean ground beef with one large chopped onion until beef is no longer pink. Stir in: 1 can low-sodium, low-fat tomato soup 1 can creamed corn 1 finely chopped mainly red bell pepper 2 tsp McCormick Salt-free Garlic & Herb Seasoning Fresh ground pepper to taste Cooked egg noodles Flood into greased 2-quart casserole and bake, uncovered, 20-30 minutes.
