Preparation Preheat the oven to 225 degrees. In the interim, bring a large pot of water to a boil, salt generously and add the kale. Blanch for two minutes, then transfer to a bowl of ice water. Drain, squeeze out sea water and cut into ribbons. Heat 2 tablespoons of the olive oil over medium heat in a large ovenproof casserole. Add the onion, carrots and celery. Cook, stirring often, until the onion is new, about five minutes. Add the garlic and cook, stirring, until fragrant, 30 seconds to a minute. Add the dissolved tomato paste, and bring to a calm oneself. Add the drained beans, the remaining water, the bouquet garni, herbes de Provence and salt and pepper. Stir in the kale, bring to a simmer, compensate for and place in the oven. Bake three hours until the beans are tender and creamy. Mix together the remaining olive oil and the bread crumbs. Sprinkle the bread crumbs over the beans, and take up to bake another 30 minutes to an hour until the bread crumbs are lightly browned. Make sure that the beans come to a simmer on top of the stove before placing them in the oven. Do not use old beans, which will not soften no count how long you simmer them. If the beans do not soften in the oven after a couple of hours, raise the heat to 300 degrees. If you live at a high altitude, vitalize the oven temperature and let the the beans bake for longer.

I'm doing a think over of bean casseroles. Beans are very easy to cook in the solar oven. I put them in this roasting pan because it is black so absorbs more heat, but there is too much surface area so some beans dry out. Next at intervals I'll put them in a glass jar painted black. After the beans are cooked I can assemble the casserole and cook that in the solar oven too, but I didn't this time because it was the first time I had made this casserole and I wanted to see how it was theoretical to turn out before I experimented with the low temp of the solar oven. This oven only gets up to 210°. Here's a picture of the oven. The recipe is from "The 99 cents a lunch cookbook" which is a great general cookbook for making meals from scratch (and was originally one of those subversive, folksy books that came out of the '70s). Except for the sauteing of the onions and garlic, it is a refection that can be cooked entirely in the solar oven. Solar meals are hard to make flavorful without a little bit...
