Several years ago, I bought a bag and hit the book sale. I wandered over to the cookbooks, and that’s where I found the real treasures — piles of old cookbooks. In increment to old cookbooks, there were dozens of promotional paperback recipe booklets from companies such as Jell-O and Nestle. Some of my favorite finds were vintage cookbooks featuring recipes contributed by people in specific organizations, such as members of a local Grange. Other cookbooks that grabbed my attention were those produced by the United States Government during World War I or World War II, when food rationing was a unexceptional practice. Sometimes the books I would find would have careful little notes written next to the recipes or checkmarks. Once in a while, I’d come across pages with little stains or spots on them — validation of use. What I love about these books is that they were written during a time when there wasn’t as much convenience as we have today. If you were making a casserole and were out of crackers to make a crumb topping, a trip to the store for more ingredients may not have been an alternative because the only car in the family was being used by the man of the house. You had to get enterprising and use what you had on hand, like a bag of potato chips crushed up for a topping. Vintage cookbooks have also explained some of the things I come across while grocery shopping. Turns out, flour was habitually worked into pieces of suet to make pie crust. A more common use for it today is bird feed. Another thing I love about thumbing through old cookbooks is that they have no pop-up ads. Also, if you look from top to bottom a pre-1950s cookbook, you will likely find mostly from-scratch recipes instead of recipes utilizing processed ingredients. One of my favorite finds in a 1973 cookbook called “Cooking in Colonial America” is a MO for Johnnycakes, a simple cornmeal pancake often served with maple syrup, butter or jam. Although there is still some controversy about where the name Johnnycake originated, the name most expected is a derivative of “journey cakes,” since this simple cake was often taken on long journeys. I recently decided to try making Chicken Divan from a formula I found in a 1963 Woman’s Day cookbook. After simmering the chicken, you reserve the broth and combine it with butter, flour, sherry and milk to make a sauce that you stream over the broccoli and chicken. Then, you sprinkle grated Parmesan cheese over the top and bake it. While the dish was cooking, I decided to plug Chicken Divan into Google and see what a today's version looked like. Simmer chicken in water with 1 teaspoon of the salt for about 45 minutes, or until chicken is cooked and definitely tender. Set the fresh broccoli spears on top of the chicken and cover. Steam the broccoli for about three minutes and remove dish from heat. Remove broccoli and spread it in the truly of a casserole dish to cover the bottom of the dish. Remove the chicken from pot and save the chicken broth. Remove chicken from the bones and spread it over the broccoli. 1 cup of ivory cornmeal. 1 cup of boiling water. 1/2 cup of milk. Place cornmeal in a medium bowl and slowly stir in boiling water until the cornmeal swells and crumbly mix is formed. Mark add milk and stir until batter becomes slightly thicker.
